In West African cooking, “concoction rice” (or Iwuk Edesi) refers to the ultimate weeknight staple: throwing rice, savory broth, aromatics, and proteins together into a single pot to cook down in harmony.

Unlike formal party Jollof rice—which requires roasting separate tomato pastes and long reduction times—this healthy weeknight version simmers long-grain rice directly in unsweetened culinary coconut milk and savory stock.

By infusing the cooking broth with flaked smoked mackerel and dried crayfish, every individual grain absorbs rich, wood-fired seafood flavor with minimal effort.

Why Coconut Milk Is the Ultimate Grain Upgrade

  • Medium-Chain Triglycerides (MCTs): Cooking rice in light coconut milk introduces healthy lauric acid, an MCT that the body converts efficiently into sustained energy rather than storing it as stubborn fat.
  • Glycemic Buffering: The presence of healthy lipids and fiber from the smoked fish buffers the digestion of white rice, blunting post-prandial blood sugar spikes.

Ingredients

  • Parboiled Long-Grain Rice or Jasmine Rice: 2 cups (rinsed until water runs clear)
  • Light Coconut Milk (Unsweetened): 1 cup
  • Bone Broth or Fish/Chicken Stock: 2 cups
  • Flaked Smoked Mackerel or Catfish: 1 cup (deboned)
  • Ground Dried Crayfish: 1 tablespoon
  • Red Bell Pepper: 1 medium, finely diced
  • Yellow Onion: 1 medium, chopped
  • Bay Leaves: 2 whole leaves
  • Habanero or Scotch Bonnet: ½ pepper, pierced whole (for aroma without overwhelming heat)
  • Extra Virgin Olive Oil: 1 tablespoon
  • Sea Salt & Dried Thyme: 1 teaspoon each

The Refreshing Side Slaw:

  • Shredded Green Cabbage: 2 cups
  • Granny Smith Apple: ½, cut into matchsticks
  • Golden Raisins: 2 tablespoons
  • Dressing: 1 tbsp olive oil + 1 tbsp apple cider vinegar

Step-by-Step Instructions

  1. Sweat Aromatics: Heat 1 tablespoon of olive oil in a wide, heavy-bottomed pot over medium heat. Sauté the chopped onion, diced bell pepper, dried thyme, and bay leaves for 3 minutes until fragrant.
  2. Pour Liquid & Season: Pour in 1 cup of light coconut milk and 2 cups of savory stock. Stir in the ground crayfish and 1 teaspoon of sea salt. Drop the whole Scotch bonnet into the liquid. Bring to a rolling boil.
  3. Add Rice & Smoked Fish: Stir in the thoroughly rinsed raw rice and gently fold in the flaked smoked mackerel. Ensure the rice is submerged evenly under the boiling liquid.
  4. Tight Steam Seal: Immediately reduce heat to the lowest setting. Cover the pot tightly with a layer of aluminum foil or parchment paper, then clamp the lid firmly over it. This traps every bit of steam, allowing the rice to cook uniformly without burning the bottom.
  5. Cook for 20 Minutes: Let cook undisturbed on low heat for 20–22 minutes. Turn off the heat completely and let the pot rest for 5 minutes without opening the lid.
  6. Fluff & Serve: Uncover, discard the bay leaves and whole Scotch bonnet, and fluff the rice gently with a fork to disperse the smoked fish. Serve hot with a side of the crisp, tart apple-cabbage slaw.
