When you need a weeknight dinner that feels generous and vibrant without spending an hour at the stove, this one-pan Mediterranean skillet delivers. Featured by Jamie Oliver, this recipe showcases two brilliant culinary hacks: scoring the thick end of chicken breasts so they sear uniformly in minutes, and using blended jarred roasted red peppers as an instant sauce to deglaze the skillet and infuse pre-cooked grains and beans.

Finished with a 2-ingredient lemon tahini drizzle and dry-charred tenderstem broccoli, this meal delivers over 38 grams of lean protein and 11 grams of gut-nourishing fiber.

Nutritional Architecture: Sesame Lignans & Grain Diversity

  • Dry-Charring Cruciferous Greens: Searing sprouting broccoli in a dry stainless-steel pan without oil caramelizes its natural sugars while trapping internal steam. This retains heat-sensitive vitamin C while producing smoky sweetness.
  • Sesame Lignan Synergy: Pure tahini (ground sesame seeds) contains sesamin and sesamolin, potent lignan antioxidants that support lipid metabolism and vascular elasticity. Whisking it with fresh lemon juice creates an instant emulsion without added oils.
  • Microbiome Grain Diversity: Tossing mixed beans (cannellini or butter beans) with ancient grains introduces diverse soluble and insoluble fibers that nourish distinct colonic bacterial strains.

Ingredients Breakdown (US Standard & Metric)

The Seared Chicken & Greens:

  • Skinless Chicken Breasts: 2 medium (approx. 7 oz / 200g each)
  • Sprouting Broccoli or Broccolini: 1 bunch (approx. 7 oz / 200g), stems slit lengthwise
  • Extra Virgin Olive Oil: 1 tablespoon
  • Lemon: 1 whole (halved for dressing and sauce)
  • Sea Salt & Freshly Cracked Black Pepper: To taste

The Quick Red Pepper Grain Base:

  • Jarred Roasted Red Peppers: 1 jar (approx. 8 oz / 230g drained weight)
  • Garlic: 2 cloves, peeled
  • Fresh Basil: 1 bunch (stems and large leaves for sauce; baby leaves reserved for garnish)
  • Cannellini Beans or Mixed Beans: 1 can (15 oz / 400g), drained and rinsed
  • Pre-Cooked Mixed Super Grains (Quinoa, Farro, or Wild Rice): 1 pouch (approx. 8.8 oz / 250g)

The 2-Ingredient Lemon Tahini Drizzle:

  • Light Running Tahini: 2 tablespoons
  • Fresh Lemon Juice: 1 tablespoon
  • Warm Water: 1 to 2 tablespoons (to loosen into a pourable sauce)
  • Sea Salt: A tiny pinch

  • Kalamata or Black Olives: 6–8, torn
  • Reserved Baby Basil Leaves

Step-by-Step Cooking Technique

  1. Preheat Pan & Dry-Char Broccoli: Place a heavy stainless-steel or cast-iron skillet over medium-high heat. Test the heat with a drop of water; when it beads and bounces across the metal, the pan is ready. Add the slit broccoli directly to the dry skillet (no oil). Sear for 3–4 minutes, turning occasionally, until the stalks are charred and tender-crisp. Transfer to a plate, drizzle with a kiss of olive oil, lemon juice, and a pinch of salt.
  2. Score the Chicken: Lay each chicken breast flat. Score the thicker half with diagonal cuts about 1 cm deep. This evens out cooking time and creates grooves to catch the seasoning. Rub the meat with a drizzle of olive oil, sea salt, and black pepper.
  3. Sear the Chicken: Add 1 teaspoon of olive oil to the hot skillet. Lay the chicken scored-side down. Sear for 3 minutes until golden and deeply caramelized, flip, and cook for another 3–4 minutes until cooked through. Transfer to a warm plate and let rest for 3 minutes (do not discard the pan juices!).
  4. Whiz the Quick Sauce: While the chicken cooks, add the drained roasted red peppers, garlic cloves, basil stems, and large basil leaves into a small blender or food processor. Puree until smooth and vibrant red.
  5. Simmer Grains & Beans: Pour the red pepper puree directly into the hot chicken skillet, using a wooden spoon to scrape up all the flavorful browned bits (fond) from the bottom. Stir in the drained beans and the grains. Simmer over medium heat for 3–4 minutes until the grains absorb the sweet pepper sauce.
  6. Whisk Tahini Sauce: In a small ramekin, stir the tahini with lemon juice and a pinch of salt. It will seize up and thicken initially; whisk in 1 to 2 tablespoons of warm water until it transforms into a creamy, pale, pourable dressing.
  7. Plate & Assemble: Spoon a generous bed of warm red pepper grains and beans onto wide plates. Slice the rested chicken breast and fan it over the grains, pouring any resting juices over the top. Add the charred broccoli, drizzle the chicken with lemon tahini sauce, and finish with torn black olives and delicate baby basil leaves.
