If your relationship with dark leafy greens consists of raw salads or green smoothies, Efo Riro will transform your kitchen.

Originating from the Yoruba people of Southwestern Nigeria, Efo Riro means “stirred leafy greens.” Traditionally simmered with native greens like shoko (Lagos spinach) or gbagba (waterleaf), this modern take utilizes readily available curly kale.

Kale’s rugged leaf structure holds up to slow simmering without turning watery or mushy, coating every ribbon in a smoky, umami-rich pepper reduction.

Healthy Fats: The Role of Unrefined Red Palm Oil

Unrefined red palm oil is a natural source of tocotrienols (a potent form of Vitamin E) and beta-carotene.

  • The Mindful Cooking Rule: Do not “bleach” the oil by heating it to its smoking point (which damages fragile micronutrients). By gently warming 2 tablespoons of unrefined red palm oil and cutting it with extra virgin olive oil or bone broth, you achieve authentic deep color and earthy aromatics with a balanced fatty acid profile.

Ingredients

  • Curly Kale: 1 large bunch (about 4 cups), stems stripped, leaves finely chopped and washed
  • Baby Spinach: 2 cups, roughly chopped
  • Lean Stewing Beef or Smoked Turkey: 8 oz, pre-cooked and shredded
  • Flaked Smoked Catfish or Mackerel: ½ cup, skin and bones removed
  • Ground Dried Crayfish: 1.5 tablespoons (essential for authentic umami depth)
  • Fermented Locust Beans (Iru / Dawadawa): 1 tablespoon (rinsed)
  • Unrefined Red Palm Oil: 1.5 tablespoons
  • Extra Virgin Olive Oil: 1 tablespoon
  • Bone Broth or Meat Stock: ½ cup

The Pepper Puree:

  • Red Bell Peppers (Tatashe): 2 large, cored
  • Scotch Bonnet Pepper: 1 (adjust to heat preference)
  • Red Onion: 1 medium
  • (Method: Pulse coarsely in a blender, then simmer in an open pot for 10 minutes to boil off excess water.)

Step-by-Step Instructions

  1. Warm the Base: Heat the red palm oil and olive oil together in a wide pot over medium heat for 60 seconds (do not allow it to smoke).
  2. Bloom the Fermented Beans: Drop in the rinsed fermented locust beans (iru). Fry for 45–60 seconds until fragrant and savory.
  3. Fry the Pepper Paste: Pour in the reduced coarse pepper blend. Stir-fry for 6–8 minutes until the sauce deepens to a dark crimson color and the oil begins to separate slightly around the edges.
  4. Add Aromatics & Protein: Stir in the ground crayfish, shredded beef or smoked turkey, flaked smoked fish, and ½ cup of bone broth. Simmer for 5 minutes so the meats absorb the sauce.
  5. Fold in the Kale: Add the finely chopped kale first. Toss thoroughly using tongs to coat every leaf with the rich pepper base. Cover and simmer on low for 4–5 minutes until the kale softens while keeping its toothsome bite.
  6. Finish with Spinach: Turn off the heat. Fold in the chopped baby spinach. Cover the pot for 2 minutes; the trapped steam will gently wilt the spinach without overcooking it. Serve warm.
