Beans are loaded with complex oligosaccharides (such as raffinose and stachyose) that our digestive enzymes cannot fully break down. When gut bacteria ferment them, excess gas and bloating occur.

  • The Remedy: Soak dry honey beans (or black-eyed peas) for 12 hours in room-temperature water with ½ teaspoon of baking soda. The mildly alkaline environment softens the tough outer skins and leaches out stubborn oligosaccharides. Discard the soaking water completely and rinse twice before boiling.

Ingredients

The Creamy Bean Mash:

  • Nigerian Honey Beans or Brown Black-Eyed Peas: 2 cups (soaked overnight and rinsed)
  • Sweet Potato: 1 small, peeled and diced into 1-inch cubes
  • Ground Cinnamon: ¼ teaspoon
  • Ground Nutmeg: ⅛ teaspoon (adds digestive warmth and highlights sweetness)
  • Water: 5 cups
  • Sea Salt: 1 teaspoon (added ONLY at the end of cooking)

The Pepper Drizzle:

  • Red Onion: 1 small, finely diced
  • Bell Pepper & Scotch Bonnet: ½ each, finely blended
  • Extra Virgin Olive Oil: 1 tablespoon
  • Ground Crayfish (Optional for savory depth): 1 teaspoon

The Air-Fried Sweet Plantains:

  • Ripe Yellow Plantains: 2 (yellow skins with extensive black spots)
  • Avocado or Olive Oil Spray: Light coating
  • Fine Sea Salt: A light pinch

Step-by-Step Instructions

  1. Simmer the Beans: Transfer the soaked, rinsed beans to a heavy Dutch oven. Cover with 5 cups of fresh water. Bring to a boil over medium-high heat, skim off any foam on the surface, then lower to a gentle simmer. Cover and cook for 35–40 minutes.
  2. Add Sweet Potato & Spices: Once the beans are tender, stir in the diced sweet potato, cinnamon, and nutmeg. Simmer for an additional 12–15 minutes until the sweet potatoes are completely soft.
  3. The Rustic Mash: Stir in 1 teaspoon of sea salt. Using the back of a sturdy wooden spoon or potato masher, mash about half of the beans and sweet potatoes directly in the pot, stirring until a thick, creamy, porridge-like texture forms. Cover and keep warm.
  4. Air-Fry the Plantains: Peel the ripe plantains and slice diagonally into ½-inch thick rounds. Arrange in a single layer in your air fryer basket. Spritz lightly with olive or avocado oil and dust with a tiny pinch of salt. Air fry at 375°F (190°C) for 10–12 minutes, flipping halfway through, until edges caramelize into deep amber brown.
  5. Quick Pepper Drizzle: Heat 1 tablespoon of olive oil in a skillet, sauté the diced onions and blended pepper for 4 minutes with a pinch of crayfish and salt until fragrant.
  6. Serve: Ladle the warm mashed honey beans into a bowl, drizzle with the savory pepper sauce, and top with hot, caramelized sweet plantains.
