Whole Roasted Eggplant with Greek Feta, Mint & Olive Pesto
Too many home cooks avoid cooking eggplant (aubergine) because salting, slicing, and frying it in heavy oil often results in a soggy sponge.
In this recipe, Jamie Oliver shares an effortless Mediterranean technique: roasting whole, unpeeled eggplants directly in a hot oven for 50 minutes. The outer skin chars and insulates the interior, steaming the flesh into a silky, smoky puree that requires no prep work.
Dressed with a rustic mortar-and-pestle Greek pesto made from crumbled sheep’s milk feta, fresh garden mint, raw almonds, and juicy olives, this dish delivers satisfying healthy fats and gut-nourishing fiber.

Nutritional Architecture: Nasunin & Polyphenol Synergies
- Nasunin in Eggplant Skin: Deep purple eggplant skin contains nasunin, an anthocyanin that protects cellular brain lipids from oxidative stress.
- Menthol & Digestion: Fresh garden mint stimulates digestive bile flow, balancing the richness of sheep’s milk feta and cold-pressed olive oil.
- Gut-Friendly Flatbread: Making a 2-minute skillet flatbread with Greek yogurt introduces beneficial lactic acid ferments while cutting out commercial dough conditioners.

Step-by-Step Cooking Technique
- Roast Whole Eggplants: Preheat oven to 375°F (190°C). Place the whole eggplants on a baking sheet. Roast undisturbed for 50 minutes until collapsed, charred, and completely tender to the touch.
- Pound the Pesto: In a mortar and pestle, pound the picked mint leaves and raw almonds into a coarse paste. Work in the lemon zest, lemon juice, honey, olive oil, and crumbled feta. Squeeze the pitted olives with your fingers to split them, then stir into the pesto. Season to taste.
- Make Quick Flatbread Dough: In a bowl, mix self-rising flour and Greek yogurt with a fork until a dough forms. Knead on a floured surface for 1 minute until smooth. Roll out thin, press sliced garlic and thyme leaves into the dough, and cook in a screaming-hot dry skillet for 2 minutes per side until puffed and charred. Brush with olive oil.
- Assemble & Dress: Lay the washed crisp greens on a platter. Slice the hot roasted eggplants in half lengthwise. Place them on the greens and spoon the Greek feta-mint pesto generously over the steaming flesh. Serve with the hot flatbreads for tearing and dipping.
