In the historic coal mining towns of eastern Kentucky and the Appalachian hills—from Harlan County to Hazard—Burgoo is a storied tradition. Originally brewed in giant cast-iron cauldrons over open wood fires for community gatherings, elections, and harvest festivals, burgoo is thicker than soup, richer than standard beef stew, and packed with garden vegetables.

Preserved and shared by home cook Roger (Back Porch Cookin’ and Reminiscin’), this family recipe recreates his grandmother’s coal-country burgoo in a home Dutch oven: finely cubed beef browned in rendered bacon fat, deglazed with savory beef stock, Worcestershire sauce, and tomato paste, then slow-simmered for 90 minutes with potatoes, carrots, butter beans, and sweet corn.

The Food Heritage Science: Small Dice Searing & Pulse Thickening

  • High Surface Area Maillard Reaction: By slicing the beef into small, uniform ½-inch dice rather than large chunks, the meat develops significantly more seared surface area. The flour coating browns against the bacon drippings, creating a deep fond on the bottom of the Dutch oven that enriches the gravy.
  • Double Pulse & Starch Balance: Butter beans (large lima beans) release amylose starch as they simmer, naturally thickening the stew broth without requiring cornstarch slurries.
  • Heme Iron & Potassium Density: Combining grass-fed beef with skin-on red potatoes and sweet carrots delivers bioavailable heme iron, zinc, and over 800mg of potassium per serving to sustain hard manual days.

Ingredients Breakdown (US Standard & Metric)

The Dusted Beef & Browned Base:

  • Lean Stew Beef or Sirloin: 2 lbs (approx. 900g), cut into small, uniform ½-inch cubes
  • Self-Rising or All-Purpose Flour: ½ cup (approx. 60g)
  • Garlic Powder: 1 teaspoon
  • Onion Powder: 1 teaspoon
  • Coarse Black Pepper: 1 to 2 teaspoons (burgoo is famous for a bold peppery bite)
  • Fine Sea Salt: 1 teaspoon
  • Rendered Bacon Drippings (or Olive Oil): 4 tablespoons (divided)

The Deglazing Broth & Aromatics:

  • Celery: 2 stalks, finely sliced
  • Yellow Onion: 1 large, diced
  • Tomato Paste: ¼ cup (approx. 60g)
  • Rich Beef Broth or Bone Stock: 4 cups (1 liter)
  • Worcestershire Sauce: 2 tablespoons

The Loaded Vegetables:

  • Red Potatoes: 3 medium (approx. 400g), scrubbed and diced into bite-sized chunks
  • Carrots: 3 medium, sliced into coins
  • Butter Beans (Large Lima Beans): 1 can (15 oz / 425g), rinsed and drained (halved if using giant variety)
  • Sweet Corn (Fresh or Frozen): 1 cup (approx. 150g)

Step-by-Step Cooking Technique

Step 1: Flour & Season the Beef

  1. Place the finely diced beef into a large bowl. Sprinkle with ½ cup flour, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp salt, and 1 to 2 teaspoons of black pepper.
  2. Toss with your hands until every cube of beef is evenly coated in seasoned flour.

Step 2: Sear in Bacon Fat

  1. Set a heavy cast-iron Dutch oven over medium heat. Melt 2 tablespoons of rendered bacon drippings.
  2. Add half of the floured beef in a single layer. Sear undisturbed for 3 to 4 minutes until the flour crust turns deep golden-brown.
  3. Remove the browned beef with a slotted spoon onto a plate. Add the remaining 2 tablespoons of bacon fat and sear the second batch of beef. Transfer to the plate.

Step 3: Sweat Aromatics & Caramelize Paste

  1. Turn the heat down to medium-low. Add the diced celery and onions to the remaining pan drippings. Sauté for 4 to 5 minutes until soft and translucent.
  2. Stir in ¼ cup of tomato paste. Cook for 2 minutes, stirring continuously, until the paste turns a dark rust color and sticks lightly to the bottom.

Step 4: Deglaze the Fond

  1. Slowly pour in 4 cups of beef broth and 2 tablespoons of Worcestershire sauce.
  2. Use a flat wooden spatula to scrape the bottom of the Dutch oven thoroughly. All the browned flour particles (fond) will dissolve into the warm stock, creating a savory brown gravy.

Step 5: Add Root Veggies & Simmer

  1. Return all the browned beef and any collected juices back to the pot.
  2. Add the diced red potatoes and sliced carrots. Stir well.
  3. Bring to a rolling boil over medium-high heat. Once bubbling, immediately reduce the heat to the lowest setting, cover tightly with the Dutch oven lid, and simmer gently for 45 minutes.

Step 6: Add Beans, Corn & Finish

  1. Remove the lid. Stir in the drained butter beans and sweet corn kernels.
  2. Cover again and simmer on low for an additional 30 to 45 minutes (total cook time approx. 1.5 hours) until the beef cubes are fork-tender and the potatoes and carrots are soft.
  3. Taste and adjust seasoning with an extra pinch of black pepper if desired.
  4. How to Serve: Ladle steaming burgoo into wide bowls over thick, freshly baked slabs of cast-iron skillet cornbread so the bread absorbs the rich brown gravy.
